Have a good stay at home crockpot recipe?

Hi All,
Since we are all basically stuck at home for now. I decided to make Chili yesterday since Maryland has been blah and rainy the last two days.
What’s your favorite crockpot meal when your stuck at home that everyone loves?
Would love to hear from everyone around the globe since many places have great things we’ve not tried yet.
 
My easy chili mix (it’s mild)
1 crockpot
Big can of light kidney beans
Regular size can of black beans
Regular size can of corn
Two regular size cans of diced tomatoes
One large can of tomato sauce
3 lbs of cooked and drained ground beef
2 packets of McCormick’s Chili Mix

Put everything in the crockpot on high for 4-6 hours. Stir it periodically.
Sprinkle with shredded cheese and serve with crackers or tortilla chips.
Enjoy. If you like it spicier use 3 pCkets of McCormick chili seasoning or try their medium or hot seasoning. I can’t do spicy anymore.

Beef and Vegetable Soup is my favorite with any and all veggies we have available chunks stew meat or hamburger meat.
 
Here's a super easy crockpot recipe:

Salsa Chicken

6 boneless chicken breasts
1 small can pineapple chunks or crushed tidbits, drain most of the juice
1 32-oz or larger jar of chunky style salsa
1 large can pinto beans or black beans

Thaw chicken and put in bottom of crock. Add everything else, turn heat on low and let it cook for a minimum of 8 hours.

I serve it with Mexican rice and warmed corn tortillas.

Here's another chicken recipe that we love -

Crockpot Coconut Curry Chicken

(Serve with saffron-flavored jasmine rice)

8+ boneless skinless chicken thighs

2 sweet onions, cut into 1/8ths

2 bell peppers, sliced into 1/4s

3 – 4 sundried tomatoes

Lots of sliced mushrooms (portabellos, shitaki, oyster, etc.)

3 – 4 heaping TBS mild curry cooking sauce (eg. Seeds of Change or Patak brand)

2 – 3 cups baby spinach (Add just before serving)


Don’t cut chicken into smaller pieces. Put all ingredients EXCEPT spinach into crockpot and cook for 8 – 10 hours. Add spinack just prior to serving. Serve over jasmine rice, not quinoa.
 
Sounds delicious. We had chicken in freezer but it got freezer burn so had to toss it. Will pickup more next time we go to store.

I LOVE my crockpot! While I like to cook the usual way ( we had a delicous and easy chicken Marsala last night) there’s nothing like coming home to a crockpot full of good stuff that’s been cooking all day long!
 
Golden Roadie my wife made the salsa chicken but utilized rotel instead then added avocado chunks, cilantro and sour cream on top when she served dinner... Tasted awesome. Thanks for a new recipe for our family cookbook!!!
 
We cooked some pork chops with herb and garlic seasoning from McCormick spice drizzled with Sweet Baby Ray’s Barbecue Sauce and pineapple bits as a side.
Was delicious.
Thanks for the idea with the pineapple 👍.
We love it but don’t eat it that often.

Oh yeah, my wife always adds a dollop of sour cream to her serving, too. "Rotel" is pasta?
 
I have a good one pan alfredo.. not a crockpot recipe though!

Ingredients:
1 box of penne pasta
32oz chicken stock
16oz heavy cream
1tsp of butter
Garlic (to taste)
Salt (to taste)

Heat butter and simmer garlic for a few seconds. Add all of the chicken stock and heavy cream. Add all penne pasta. Heat to simmer and stir occasionally. Starch from noodles will thicken it up. Salt when the sauce starts to thicken.Voilà!

You can add anything you want to it. I often cook some chicken in the pan first. I also eat it with ravioli or tortellini.
